Fall is soup weather

As cooler weather arrives, I become a soup lover. It makes me excited for sweater weather. So, this month, I thought I would pass on one of my favorite soup recipes: Butternut Squash Soup. This delicious recipe is easy to make, comforting and quick. Enjoy.

Ingredients:

2 cups: vegetable stock

4 cloves: peeled & minced garlic

1 carrot, peeled & diced

1 granny smith apple, cored & diced

1 medium butternut squash (4-6 cups of cubed or diced)

1 sprig fresh sage

1 white onion, diced

½ teaspoon of salt

¼ teaspoon freshly-ground black pepper

1/8 teaspoon of cayenne (I substitute jalapeno peppers, diced)

½ cup coconut milk

I put this in my Instant Pot but it can be made over the stove. Combine veg. stock, garlic, carrot, apple, butternut squash, sage, onion, salt, pepper, cayenne; toss/stir to combine. Close lid and cook. 8 min on high in Instant Pot. Remove the sage; stir in coconut milk and puree in blender. Taste and add seasoning as needed.
